Whole Wheat Buttermilk Pancakes December 14, 2010

I’m happy to say that my 8-mile long run this week went well! I met up with my running partner, Carrie, and off we went in the windy weather. Of course, I chatted for the first 40min of the run and then tried to make myself listen and let her talk! It is hard NOT to talk so much to Carrie because she’s such a good listener (or maybe I’m just a really good talker 😉?).  And when she finally gets a chance to speak, she speaks wise words of wisdom coupled with good advice and observations; It probably helps that she is getting her PhD in counseling psychology! 🙂

So I pretty much have free counseling session while running with an awesome friend! Could it get any better?? Ohh yes.

We finished in 1:03 min averaging a 7:55 min/mile pace! I didn’t even notice that we were going so fast because we were talking. A good way to gauge your long run is to hold a pace where you can easily converse. Check!

Afterwards, I decided to make a yummy recovery breakfast.

Whole Wheat Buttermilk Pancakes
(Recipe from the Better Homes and Gardens Prizewinning Cookbook)

Ingredients
– 1 3/4 cups whole wheat flour
– 2 tablespoons brown sugar
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 egg, slightly beaten
– 1.5 cups buttermilk
– 3 tablespoons applesauce

Directions

1. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter will be slightly lumpy.)

2. For each standard-size pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet, spreading batter if necessary. For dollar-sized pancakes, use about 1 tablespoon batter. Cook over medium heat for 1-2 mins on each side or until pancakes are golden brown, turning to second side when pancakes have bubbly surfaces and edges are slightly dry.

3. Serve warm with syrup, peaches, and blueberries! (or any other fruit) I also buttered them with my homemade butter!

I think I do the same thing on runs. I need to learn to shut up and let the other person talk…lol 🙂
