Trader Joe’s Pumpkin Chocolate Chip Bread December 15, 2010

Another one of my favorite reasons for the Christmas season is all of the parties! Kevin and I went to a party this weekend and I didn’t have much time to whip up anything homemade. My sister sent me a box of Trader Joe’s Pumpkin Bread which is basically homemade, right?

And I added Ghirardelli Chocolate chips.

Ingredients
1 Full Package of Mix (Trader Joe’s Pumpkin Bread & Muffin Mix)
2 Large Eggs
1/2 cup of canola or vegetable oil
1 cup of water
Chocolate chips to your taste

Directions

#1. Prepare: Preheat oven to 350 degrees. Lightly grease a standard 9×5 loaf pan with no stick cooking spray or butter.

#2. Mix: Combine eggs, oil, water in a medium bowl. Add mix. Fold together with a rubber spatula until batter is smooth. Add chocolate chips

#3. Pan: Spread batter in pan, filling corners and leveling top.

#4. Oven: Bake for 55 to 60 minutes. Allow to cool for 15 minutes before removing from pan. Yields 10 to 12 slices per loaf

Of course, it was a success! Everyone LOVED it and I might have let people think it was homemade 😉
