Bruschetta January 31, 2011

This is an easy and fast appetizer  or side dish to make. I took some creative license and didn’t follow the recipe exactly – I used it as a backbone and then substituted some stuff in my fridge that I thought would mix well.

– 1 tablespoon olive oil
– 1 Tablespoon chives (didn’t have chives, didn’t use chives)
– 1 tablespoon basil
– 1 tablespoon lemon juice
– 1 clove garlic, Minced
– 2 cups seeded and chopped Roma tomato (3-4 medium tomatoes)
1/2 cucumber, diced
– 1/2 red pepper, diced
– Some red onion, diced

– 1 8oz loaf baguette-style french bread, cut into 1/2 inch slices


1. In a medium bowl stir together olive oil, chives, lemon juice, and garlic. Add tomato and onion; toss to coat. Season to taste with salt and pepper. Set aside

2. Toast bread in the oven until slightly brown.

3. To serve, with a slotted spoon, spoon tomato mixture onto each toast slice.
