Guacamole February 24, 2011

I love guacamole. Avocados are very healthy for you and go great on sandwiches or as a dip! It’s easy to make too

Homemade Guacamole

1 medium roma tomatoes, seeded and finely chopped
– 1/4 of a small red onion, finely chopped
– 2 tablespoons of lime juice
– 1 tablespoon of olive oil
– 1/4 teaspoon kosher salt
– 1/8 teaspoon black pepper
– 1 or 2 garlic cloves, minced
– 2 ripe avocados, halved, seeded, peeled and coarsely mashed
*Optional – 1/2 of a jalapeno, seeded.
** instead of chopping all this stuff by hand, I tossed it in a food processor

1. In a food processor, or bowl, combine tomato, red onion, lime juice, olive oil, salt, pepper, avocados, optional jalapeno pepper. . .

and garlic.

2. Mash, mash mash! Or mix, mix, mix!

I think mine turned out a little too yellow cuz I added a lot of tomatoes! Oops!

I love guac. Your avocado looks so perfect. It’s hard to pick a good avocado sometimes but I think they are in season now.
