Christmas Tidings! December 24, 2011

The Christmas season is one of my favorite times of the year (along with many other people I’m sure). Full of parties, friends, food, and family. Today we visited with some friends at Panera for lunch in between rushing around to get last-minute presents and food items.

These are good friends of my family! It was wonderful to be able to care a little bit of time to share lunch.

mmmm, I’m such a sucker for Panera.

 This Christmas, I was in charge of desert and I had planned to make my delicious Tirimisu. However, I had an EPIC fail. When I say to whip the heavy whipping cream into STIFF peaks, I mean REALLY STIFF peaks. Sheesh, I can’t even follow my own recipe!

Turned out a little soupy. . . doh!

My sister and Isaac just arrived! Yay for Family! To all a good night 🙂



Spaghetti Squash March 4, 2011

Spaghetti squash is a quick and easy meal to make; it is also vegetarian and almost tastes like pasta!

Spaghetti Squash

– Spaghetti Squash You can find them at any super market
– Spaghetti sauce
– Parmesan cheese (optional)
– salt to taste (optional)


1. Poke holes in your spaghetti Squash

2. Boil it for approx 30 mins – the squash will become a lot softer and easier to cut through. Cut in half and de-seed

3. Proceed to scrap out the inside of the squash

Oh my gosh! Is that Spaghetti??

3. Add pasta sauce and cheese if you wish and have it for lunch or dinner  I also mixed some of my beans in there too!

Minestrone Soup November 11, 2010

You wouldn’t believe that it’s actually getting chilly here in Florida! I’ve been running in tights and snuggling up with a cup of hot coco before bed (and with Kevin too ;)) I decided to make some minestrone soup with lots of veggies to fend of any illness that this weather might blow our way. Even Kevin decided he would muscle down some veggies.

4 C homemade chicken broth (1 32oz container) You could also use vegetable broth to make this a vegan/vegetarian dish
1 15oz can tomato sauce
1/2 C water
Chopped veggies I used carrots, squash, frozen green beans, frozen peas, and kale – but use whatever you have!
1 can Great Northern Beans I cooked my own which I’ll be showing you how to do in posts to come
2 C (cooked) whole wheat pasta, any shape/kind
Cracked pepper
Italian spices

#1. Make pasta according to box instructions

#2. Take a big pot and place it on the stove. Pour in 1 15oz can tomato sauce, 4 cups of chicken broth, and 1/2 C of water. Turn heat to medium high.

#3. Chop veggies and add them in. Bring mixture to a simmer.

#4. Toss in the spices, beans, and pasta, and top with some cracked pepper. Let mixture warm (you don’t want to overcook the veggies!). Top with cheeeeese

 Snuggle up and enjoy!
